Mexican Medley: 

This is something that I have recently come up with and find very tasty. 

Ingredients:

1 ear of corn

1 can of black beans drained and rinsed

2 bunches scallions

3-4 cloves garlic (optional)

½ - 1 lb. of extra lean ground beef

½ packet taco seasoning

Plain yogurt

1 lime

1 teaspoon fresh cilantro

 

Instructions:

Heat large frying pan on moderate heat.  Coat with non-stick cooking spray or 1-2 tablespoons of olive oil.

Chop scallions, mince garlic, and add to pan.

Crumble in ground beef and cook until fully browned/cooked.

Cut ends off of the ear of corn, slice off all the kernels, and add to pan.

Let scallions, garlic, beef, and corn cook until corn is starting to get translucent.

Drain and rinse black beans and add to pan.

Stir in ½ packet of taco seasoning, reduce heat to low, and let simmer approximately 5 minutes.

Serve in bowls

Stir in 1 tablespoon plain yogurt, a few drops of lime juice, and top with teaspoon fresh cilantro.
